Lee Du-hyeong Hongdukkae Kalguksu is a hand-made kalguksu (knife-cut noodle soup) and hand-made mandu (dumpling) specialty restaurant located in Annyeong-dong, Hwaseong-si, Gyeonggi-do, near Yunggeolleung (the royal tombs of Crown Prince Sado and his wife). The restaurant is spacious, and the noodles, which are made by rolling dough with a hongdukkae (a traditional wooden rolling pin) in an open kitchen visible to customers, are chewy and elastic. The hand-made mandu, prepared fresh daily, are rustic but generously filled and delicious. When ordering kalguksu, barley rice is served along with kimchi and radish salad as a pre-meal dish that can be mixed together. Seafood kalguksu and clam kalguksu are signature menu items, but beef shabu-shabu, hand-made mandu, and bossam (boiled pork wrap) are also popular. There is a spacious parking lot in front of the restaurant, making it convenient to visit.
